If you want a creamy, buttery, delicious, but still low carb chicken recipe, this one is for you:
4-8 chicken breasts (depending on how many you are feeding or if you want leftovers)
2 tablespoons grassfed butter
1 bunch scallions, chopped
1 small container of full-fat sour cream
(Optional: 4-6 pieces of bacon, cooked and chopped)
salt & pepper to taste
Melt the butter in a large skillet or frying pan over medium heat. Once it is slightly brown, add you chicken.
Cook chicken for 3-4 minutes per side, until it is browned and the juices run clear.
Now, turn the heat down a bit to medium low, add the scallions and saute until soft.
Add as much sour cream as you want/ need to make enough sauce for your chicken. Stir until mixed with the scallions. Now would be the time to add your bacon, if you want it. It adds a delicious flavor to the already great sauce!
Let the chicken simmer in the sauce for a few minutes, then serve by itself or over rice or any kind of potato!
