I’ve been making a lot of smoothies for lunch or a snack lately, so I thought I’d share my favorite new recipe!
The easiest way to measure out the ingredients by using a kitchen scale that has a zeroing out or tare function and putting things directly into your blender, but you can also just eyeball it.
4 ounces coconut milk (or almond milk, if you prefer)
4 ounces real juice of choice* (I like cherry or cranberry)
4 ounces frozen berries (like Trader Joe’s frozen mixes)
1 or 2 frozen bananas
Blend together on medium speed for at least a minute. It takes a while for air to penetrate the mixture and to get a nice homogeneous blend.
If you have extra, you can put it in the fridge for later or pour into a freezer-friendly container and freeze it for a cold treat!
* I say “real juice” to specify that you should not use juice cocktails unless you want all the extra sugar and preservatives! You can buy undiluted and unsweetened juices at most grocery stores, and they are so much healthier.
