Ben’s Pho Recipe

Ben made Pho for dinner tonight and it was delicious! This is the only time I’ve ever had it, so I can’t speak to how it compares to pho in restaurants or anything, but I thought it was a really tasty soup. Here’s what we put in it:

1 quart bone broth

1 pound meat (we used ground beef but thinly sliced pork or beef is more typical)

1 diced red or yellow onion

2 scallions

1- 1 1/2 cups cabbage

a handful of dried Shitake mushrooms

a handful of dried “black fungus”

glass noodles

Sriracha garlic chili sauce

fish sauce

lime

dash of salt

Directions:

Heat the bone broth in a medium pot on high. While it’s heating up, get the rest of your ingredients ready.

Once the broth is boiling, put in everything else.

The idea is that the hot broth will cook everything on contact, but the broth cooled down significantly for us when we poured it over all the ingredients, so we put it back in the pot and cooked everything on high together for about 5 minutes.

Add the spices and seasonings to taste and you’re done!
