Tart Paleo Sweet Potato Salad

Today’s delicious recipe comes from The Paleo Cookbook from Rockridge Press. It’s a tome of 300 recipes and it’s by far the most in-depth cookbook I think I’ve ever seen. I made the recipe as written on Monday and it really does make 4-6 big servings!


3 medium sweet potatoes, peeled and cubed

5 or so strips of good bacon, cooked and broken up

4 TBSP olive oil

4 TBSP good mayonnaise

2 TBSP fresh lemon juice

1 TBSP chopped chives

1 TBSP Dijon mustard

A couple grinds of black pepper

1 tart apple, chopped

(3 hard-boiled eggs, chopped) <- I didn’t include hard-boiled eggs because I think they’re gross


1. Put cubed sweet potatoes in a large pot with enough water to cover them and bring them to a boil over medium heat. Cook until tender, but not quite as long as if you were going to mash them.

2. In a small bowl, combine oil, mayo, lemon juice, chives, and mustard to create the dressing. Add pepper to taste.

3. Once potatoes are done, drain them and let them cool a bit. Then put them in a large bowl with the bacon, apple, and eggs (if you like that type of thing) and top with the dressing. Mix well and enjoy warm or cold!
