These are inspired by the package of Lush Nuts that I got in my November Yogi Surprise box. I loved them and wanted to see if I could get close to creating a similar snack. They didn’t turn out like the Lush Gourmet ones, but they’re still really tasty!
Unsweetened dried coconut chips
Roast the almonds for 10 minutes in a 350 degree oven.
While almonds are roasting, crush lavender and coconut chips in a mortar and pestle. When crushed to your satisfaction, put them in a shallow bowl.
Pull out the pan, let cool for a few minutes, then place in a bowl of simple syrup and make sure they get covered.
Next, transfer almonds to the lavender and coconut mixture bowl and roll them around in there until covered.
Transfer the almonds back to the baking sheet and roast for another 10 minutes. Take them out, cool, and enjoy! I’ll be serving these for a Thanksgiving appetizer tomorrow!
