Simple & delicious dinner recipe. It’s paleo & gluten-free, and tilapia is also a lean fish, so it’s a great thing to add to your diet! I made this fish last night with steamed broccoli and resistant starch potato wedges and it was super tasty.
2 tilapia filets
1 cup almond meal
3 cloves chopped garlic
2 tablespoons butter or coconut oil
2 tsp chopped fresh parsley or 1 TBSP dried parsley
Grab two shallow dishes and crack and whisk the egg into one. Put half of the almond meal into the other dish, and add parsley, salt, and pepper to taste.
Chop the cloves of garlic while melting the butter/coconut oil in a frying pan over medium heat.
Add the garlic to the pan and stir frequently to keep the garlic from burning.
While the garlic is cooking, put your first filet in the egg dish and make sure both sides are thoroughly coated, then plop it into the almond meal dish and coat it with the breading on both sides.
Once the fish is breaded, put it in the frying pan with the garlic. Cook for about 2-3 minutes on each side
All done! Be sure to scraped the garlic out of the pan and put it on top of your fish when serving it up.
