This is a very easy recipe to whip up that makes several meals – great for a packed week. I made this for a yummy lunch on a workout day.
1 box penne or shell pasta (I used gluten-free rice pasta, it tastes just like pasta made from wheat flour)
1/2-1 full jar pasta sauce
1 package uncooked Italian sausage
anything else you want to add- scallions, bell pepper, onion, etc.
Bring a large pot of water to a boil. Cook pasta as directed on the package.
Preheat the oven to 350 while the pasta is cooking.
Prepare a large casserole dish by lightly buttering or using cooking spray to keep the pasta from sticking. You could also line the bottom with foil.
Remove sausage from casings and make bite-sized balls.
Mix the sauce in thoroughly, then mix in the sausage bites.
I like to mix some cheese into the pasta and sausage as well. This would be the time to add any extras you want, as well. Once you have everything combined, top with grated cheese and bake for about 30 minutes, or until the cheese is melted and the sauce is bubbly.
