Lemon Sage Butter Tilapia with Heirloom Tomatoes Recipe

This is a super simple recipe that I made for dinner last night! It turned out really well and only requires a few ingredients. I love cooking with fresh herbs, they make the food taste so flavorful and really works with fish!

2 filets tilapia or other white fish

2 TBSP olive oil

Salt & pepper to taste

4 TBSP + 1 TBSP grassfed butter (Kerrygold is delicious)

Fresh sage, chopped (as much as you want, I used about half a package from Trader Joe’s)

Juice of 1 lemon

About 1 cup of cherry tomatoes, heirloom if you can find them

Melt 4 TBSP butter in a small saucepan and add the sage. Cook until butter is bubbling a bit and you can smell the sage. Add the lemon juice, stir, and remove from heat.

Heat olive oil in a large frying pan and then add the fish. Salt and pepper each side. Cook for about 3 minutes on each side.

Heat the last TBSP of butter in a smaller frying pan and add the washed cherry tomatoes. Cook until the skins pop and slightly brown. Add to the butter sauce.

Serve the fish with potatoes and a green salad. Spoon butter sauce and tomatoes over the top and enjoy!

This fish recipe was delicious with So This Happened… white wine blend from Club W!
